The fun thing about a classic egg and cheese sandwich is how many ways you can change it up. Lately I’ve been really into giving our sandwiches a Tex Mex twist. I make a little egg scramble with salsa, toss in some Mexican shredded cheese, and top it with a little avocado. When my husband orders this up I even add a few shakes of hot sauce. That is a little too hot for me, but he loves it! On top of some toasted whole wheat this is a great Tex Mex breakfast sandwich. But, if you really want to make it true Tex Mex, wrap it in a warm corn tortilla. Perfect breakfast idea!
