Green Velvet Cupcakes for St. Patrick’s Day

Red velvet cupcakes are very popular, especially around holidays like Valentine’s Day or Christmas, but have you ever made green velvet cupcakes?

Ingredients

For the cupcakes

  • 2 ½ cups cake flour
  • 1 teaspoon baking soda
  • 1 ½ cups sugar
  • ½ teaspoon salt
  • 2 tablespoons cocoa powder
  • 1 cup butter, room temperature
  • 1 cup buttermilk
  • 2 eggs
  • ½ teaspoon vanilla
  • 4-5 drops green food color
  • 1 tablespoon vinegar

For the frosting

  • 4 cups powdered sugar
  • ½ cup butter, room temperature
  • 1 teaspoon vanilla
  • 6-8 teaspoons water (more if needed)

Preparation

For the green velvet cupcakes

  1. To make the green velvet cupcakes for St. Patrick’s Day, in a medium mixing bowl, sift the flour, baking soda, and cocoa together.
  2. Take another bowl and cream the butter and sugar together.
  3. Add the buttermilk, eggs, vanilla, green food color, and vinegar to the butter mixture.
  4. Slowly add the flour mixture to the butter and sugar mixture, mixing it along.
  5. Once the ingredients are combined, mix with the hand mixture for about two more minutes.
  6. Line 2 cupcake pans with green or yellow cupcake liners.
  7. Fill each cupcake liner about 2/3 full with cupcake batter.
  8. Bake the green velvet cupcakes at 350 degrees Fahrenheit for 20 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove the cupcakes from the oven and cool them on a cooling rack.

For green velvet cupcake frosting

  1. While the cupcakes are cooling, make the green velvet cupcake frosting by combining the powdered sugar, butter, vanilla, and water with a hand mixer until well combined.
  2. Put the frosting into the pastry bag with the large star decorating tip attached.
  3. Place the tip right above the outside top edge of the cupcake, and gently squeeze the pastry bag to swirl the icing from the outside in circles, ending in the center and pulling up.
  4. Repeat the process to decorate all of the cupcakes. And you are done! Your green velvet cupcake is ready to be served.

You can serve the cupcake as it is to your guests, or you can decorate it with a topper. To decorate the green velvet cupcake with a topper, print out the St. Patrick’s Day button cupcake toppers and cut them into shape.

Then, use hot glue to stick a toothpick to the back of each topper, leaving ¾ of the toothpick at the bottom to be inserted in the cupcake. Once all the toppers are prepared, place them on your green velvet cupcakes.
