The Naptime Chef Cook Book Review

 

I try to make sure we eat healthy, yummy meals, but that prepared food area at Whole Foods looks better and better as the week goes on. Lucky for me, and my family, I was sent a copy of Kelsey Banfield’s cookbook The Naptime Chef: Fitting Great Food Into Family Life (you can buy it HERE). I’m sure you can guess the premise, recipes you can make during naptime. It also means recipes I can actually tackle when I get home from work. I have already tried quite a few and I can tell you they are quick, they are relatively easy and they are delicious! Here’s a brief rundown of the recipes I’ve tried and how they turned out. 

Pizza with Artichokes, Carmalized Shallots and Ricotta

This was in a word, amazing. I used my own pizza dough (I made this on a Saturday evening) but during the week I can easily see using store bought pizza dough to cut back on time. My husband was suspicious, even calling this pizza mine, but in the end, he ate most of it. The combination of the carmalized shallots with the ricotta and artichokes was perfect and the timing made it so easy.

Roast Salmon with Herbed Creme Fraiche

I followed the recipe exactly and it took me exactly five minutes prep and 15 minutes cook time, just as stated. This was delicious, and the herb creme fraiche added a nice fresh taste. I can see this recipe becoming a staple in my kitchen.

Mexican Chocolate Cake with Chocolate Cinnamon Buttercream Frosting

I mean come on, chocolate cake with chocolate buttercream frosting, what’s not to love. This recipe was so easy to make and the 15 minute prep time was spot on. I had to bake mine about 5 degrees warmer then stated in the recipe, but I kid you not, I am baking in an original 1950’s Wedgewood oven so it can be forgiven for not getting quite as hot as the dial says. The cake was moist and really good, the frosting added a nice sweet touch to the overall taste. The longest part of baking this cake…frosting it.
