Lemon Blueberry Bundt Cake
Cake
Ingredients:
- 1 package yellow cake mix
- 1½ cup blueberries
- 1 package lemon gelatin
- ⅔ cup hot water
- ⅔ cup melted butter
- 4 eggs
- 1 bundt cake pan
Instructions:
Step 1: Preheat the oven to 350 degrees.
Step 2: Place the blueberries in a bowl and add 3 Tablespoons of cake mix to the bowl and coat the berries with the mix.
Step 3: Combine all other ingredients and use an electric mixer to beat the mixture for 2 minutes until smooth.
Step 4: Gently fold in the blueberries into the mix, and then pour the mix into an oiled/floured bundt cake pan.
Step 5: Bake for 40-45 minutes. Allow to cool for 20 minutes on a wire rack, then remove the cake from the pan and cool on a wire rack for 20 more minutes.
Glaze
Ingredients:
- 2 tsp lemon zest
- ¼ cup lemon juice
- 1 cup confectioner’s sugar
Instructions:
Step 1: Whisk all of the ingredients together until smooth. Pour over the cooled bundt cake.
