Easy Chocolate Ice Cream Sandwich Recipe for Parties

If you want an easy dessert idea to feed a crowd, make this chocolate ice cream sandwich recipe. Your guests will love this sweet treat, as it will transport them back to their childhood days. When pressed between soft, sticky, and chewy cookies, soft, plain vanilla ice cream takes your dessert game to the next level.

Ingredients

  • Vegetable oil cooking spray
  • ½ cup all-purpose flour (plus, 1 tablespoon more)
  • ¼ teaspoon kosher salt
  • ¼ teaspoon baking soda
  • 1⁄3 cup sifted Dutch-process cocoa powder
  • 3 tablespoons unsalted butter, softened
  • ¼ cup white sugar
  • 2 tablespoons light brown sugar
  • ½ teaspoon pure vanilla extract
  • 1⁄3 cup whole milk, at room temperature
  • 6 scoops vanilla ice cream

Preparation

  1. To make the chocolate ice cream sandwich recipe, preheat the oven to 350 degrees Fahrenheit. First, line a baking sheet with a silicone liner. Then, spray the liner with cooking spray. Rub it in to ensure it’s completely covered.
  2. Whisk flour, salt, baking soda, and cocoa until thoroughly combined. If the mixture seems clumpy or chunky, sift it.
  3. In another bowl, mix butter, sugar (white and light brown), and vanilla until you have a smooth paste.
  4. Add the flour mixture to the milk. Stir until the batter is smooth and stiff.
  5. Then, clean off the spatula with a cookie scoop. Following this, place 12 scoops of batter on the prepared baking sheet.
  6. Bake for about nine to ten minutes in the center of the preheated oven. The tops of the cookies shouldn’t look wet and shiny by the end of it.
  7. Remove the cookies from the oven. Tap the pan on the counter five times to settle and compress them. Let the cookies cool to room temperature on the pan (about 15 minutes).
  8. Transfer the baking sheet to the freezer, which will make the cookies firm (about 15 minutes).
  9. Remove cookies from the freezer and the pan by lifting the liner carefully under each one.
  10. Then, poke 10 or 12 holes in the surface of each cookie. You can use chopsticks or anything of your choice. Return to the freezer until ready to assemble.
  11. When they are ready to assemble, remove them from the freezer. Turn one cookie upside down, place one scoop of ice cream on top, and sandwich with a second cookie.
  12. Serve the chocolate ice cream sandwich immediately or wrap it in plastic wrap. Then, freeze for three hours before serving. Repeat the process to make the remaining ice cream sandwiches.

The recipe might seem tedious, but trust us, it’s not. You can have the chocolate ice cream sandwich immediately or a few hours after assembling it. Moreover, this will let the cookies absorb moisture from the ice cream and get even softer.

So, make vanilla ice cream at home or save time by getting the ice cream tub from the store. Then, make this chocolate ice cream sandwich recipe right away for your friends and family. Everyone, from kids to adults, will love this sweet treat at your party.
