Easy Hazelnut Cookie Recipe Kids Can Make This Summer Break

We all know kids absolutely love cookies. With summer break and schools being closed due to the heat wave, they will love having some cookies while at home to satisfy their sweet tooth. However, try this hazelnut cookie recipe instead of making regular chocolate chip ones with your kiddos. Ingredients

  • 1 ⅓ cups grams lightly toasted hazelnuts (without skin)
  • 2 tablespoons vegetable oil
  • 6 tablespoons unsalted butter, at room temperature
  • ½ cup dark brown sugar, packed
  • ⅓ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 cup flour
  • ½ teaspoon baking soda
  • Pinch of salt

Preparation

  1. To try this hazelnut cookie recipe, first preheat oven to 350 degrees Fahrenheit.
  2. Place the hazelnuts in a food processor and grind them coarsely, ensuring you don’t grind them too much. Reserve ¼ cup of the hazelnuts. Grind the remaining nuts finely and add some oil. Blend the mixture thoroughly into hazelnut butter. Set aside.
  3. In a bowl, cream the butter and sugar until light and fluffy (this can also be done in the food processor or with an electric mixer). Beat in the hazelnut butter, the egg, and the vanilla and mix thoroughly.
  4. Then, mix in the dry ingredients. Sift the flour and add the baking soda and salt. Mix thoroughly, and add the reserved hazelnuts.
  5. Using a teaspoon, form the dough into balls. Then, arrange them 2 inches apart on baking sheets. The sheets should be greased or lined with parchment paper.
  6. Then, using the prongs of a fork dipped in flour, flatten the balls into 1½-inch rounds. Top tip: If you want the cookies to have a crisscross design, chill the dough for about 30 minutes before doing so.
  7. Bake for 8 to 9 minutes or until the hazelnut cookies are golden. Transfer them to a rack and let them cool completely.

Your hazelnut cookies are now ready to be devoured. They can be kept in a sealed jar for about a week. Your kids can add chocolate chips to this hazelnut cookie recipe to make it chocolatey or dip half of the cookie in the melted chocolate. Either way, they will taste heavenly.
