Best Lemon-Berry Firecracker Cake Recipe for the 4th of July

Ingredients

  • 432 grams of white cake mix
  • 1 pack instant lemon pudding mix
  • 4 eggs, large
  • ½ cup vegetable oil
  • 1 cup plus 1 tablespoon (or more) lukewarm water
  • ¼ cup raspberry jam
  • 7 drops of red gel food coloring, divided
  • ¼ cup blueberry jam
  • 7 drops of blue gel food coloring, divided
  • 3 cups powdered sugar
  • 2 tablespoons fresh lemon juice
  • ¼ cup red, white, and blue sprinkles

Preparation

  1. To make the lemon-berry cake recipe, first preheat oven to 350 degrees Fahrenheit. Then, lightly coat a Bundt pan with cooking spray.
  2. Next, combine cake mix and lemon pudding mix in a large bowl. Add eggs, oil, and a cup of lukewarm water. Beat until smooth (should take about a minute) using an electric mixer at medium to high.
  3. Now, scrape a cup of lemon batter into a medium bowl. Stir raspberry jam and five drops of red food coloring into the batter until well combined. If you want the color to be deeper red, add more food coloring, a drop at a time.
  4. Scrape another cup of lemon batter into another medium bowl. Stir blueberry jam and five drops of blue food coloring into the batter until well combined. If you want a deeper blue color, add more food coloring. However, go slow and add a drop at a time.
  5. First, pour in your red batter. Then, pour the remaining lemon batter over the red batter. Finally, pour the blue batter into the Bundt pan.
  6. Bake until a tester inserted in the center comes out clean (should take about 40 to 45 minutes). Let the lemon-berry cake cool in the pan for 15 minutes, flip it onto a wire rack, and let it cool completely.
  7. Whisk together powdered sugar, lemon juice, and a tablespoon of lukewarm water in a medium bowl. Add more water, if necessary, until the mixture is smooth and the consistency is lava-like.
  8. Scoop a heaping quarter cup of white glaze into a bowl and stir in two drops of red food coloring. Then, scoop another quarter cup of white glaze into another bowl and stir in two drops of blue food coloring.
  9. Lastly, drizzle white, blue, and red glaze over the lemon-berry cake. Let the glaze set for about 30 minutes before slicing. Leave the sprinkles to your kids and let them cover the top to their hearts’ content.
