And I’m happy to be that mom! The other morning while I was spreading sunflower seed butter on toast for my older son, my youngest son asked me for chocolate oatmeal, and I (naturally) hopped to it. I totally admit to being a short order cook at breakfast!
Luckily I had a box of Ibarra Mexican chocolate in the pantry, and within about 10 minutes I created this quick and easy breakfast. It was a huge hit! The chocolate does indeed add sugar, however, the milk, oats and flax are all packed with nutrients and contribute to a healthy breakfast. We think of it as a breakfast treat, and have been having it about once a week. Did I mention it’s delicious!?
Recipe:
- 2 cups milk
- 1/4 cup grated or chopped Mexican chocolate (Ibarra is my favorite)
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 2/3 cup rolled oats
- 1 tablespoon flax meal
- Pinch of salt
Preparation:

Total Prep and Cooking Time: 15 minutes
In a small saucepan, bring the milk to a boil and immediately reduce the heat to low. Add the chocolate, vanilla, cinnamon, oats, flax, and salt. Stir to combine and cook until almost all of the liquid has been absorbed and the oats are soft. This should take about 7 minutes.
