Simple Lemon Pudding

I love the soft, smooth feel and bright lemon flavor. It is  just perfect for nearly any moment comfort is needed or even for a fun celebration. Here is my easy method for making a tasty simple lemon pudding. If you are really in the mood for some fun think about using oranges or grapefruit instead! —



Ingredients: 

  • 2/3 cup sugar
  • 1 ½ cups water
  • 5 teaspoons cornstarch
  • 3 tablespoons lemon juice
  • 1 pinch kosher salt
  • 3 large egg yolks

Preparation: 

1. In a small saucepan bring the sugar and water to a boil and stir in the lemon juice and cornstarch.

2. Beat the egg yolks and stir a tiny bit of the sugar water into the egg yolks to temper them. Then, whisk the eggs into the cornstarch mixture until smooth. Pour this mixture into a plastic container and refrigerate for at least 3 hours, or until set.
