Marinated Green Beans

Sides dishes are nearly as important as the main course when it comes to Thanksgiving or really any dinner! Our Thanksgiving feast always includes turkey surrounded by large dishes of vegetables and potatoes. This uncomplicated recipe for Marinated Green Beans packs a flavor punch in each bite and the straightforward preparation is perfect for the hectic kitchen atmosphere of Thanksgiving day.

Ingredients:

  • 1 pound green beans, washed and trimmed
  • 3 tablespoons red wine vinegar
  • 2 tablespoons high-quality olive oil
  • 2 tablespoons dijon mustard
  • 1 teaspoon sugar
  • ¼ teaspoon Kosher salt (plus 1 teaspoon for water)
  • ¼ teaspoon fresh cracked pepper
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons crumbled feta or goat cheese (optional)

Preparation:

Step 1: Fill a large saucepan with water and add 1 teaspoon kosher salt. Bring water to a boil.

Step 2: Add the green beans to the boiling water. Cook for 3 – 4 minutes, or until the green beans are firmly tender and can easily be speared with a fork. Drain water and plunge green beans immediately into a bowl of ice water. This will stop them from cooking and help them stay crunchy and a beautiful bright green.

Step 3: In a large mixing bowl combine vinegar, olive oil, mustard, sugar, salt, pepper, and parsley. Whisk vigorously to make sure everything is thoroughly combined. Add the green beans to the bowl and toss well.

Step 4: Cover bowl with plastic wrap and place in the fridge for at least 3 hours or up to overnight. Serve room temperature, or reheated in the microwave for 1 minutes or until desired temperature.

Step 5 (optional): To ramp up the falvor even further sprinkle the top with crumbled feta or goat cheese.
